PURPOSE:To obtain instant steak having gloss, flavor, etc., of steak it self, preservable for a long period of time by rapidly heating raw material meat at low temperature, quickly cooling and coating the outer surface of the raw material meat with seasoning fat. CONSTITUTION:Raw material meat such as fillet is sliced, treated at low temper ature and preferably the center of the meat is maintained at <=-30 deg.C. Then the meat is transferred to a heater, heated and roasted at high temperature for a short time (e.g. at 150-250 deg.C for 60-120sec in the case of plate type). Then the meat is rapidly cooled and then the outer surface of the meat is coated with seasoning fat to give the aimed steak. |
