PROBLEM TO BE SOLVED: To provide a process and apparatus for the automatic preparation of SUSHI (vinegared rice topped with fish fillet, etc.) by automatically placing a SUSHI topping or ingredient on cooked rice or a formed cooked rice. SOLUTION: A number of fish fillets for SUSHI topping 6 are separately supported on a SUSHI topping supporting tool interposing a gap between the fillets keeping the short-side of the fillet in vertical state. The supporting tool is placed on a transfer apparatus, the fillets for SUSHI topping 6 are intermittently transferred and a piece of the fillet is clamped with a SUSHI topping clamping apparatus and pulled up. The clamping apparatus is gyrated to turn the clamped fish fillet in horizontal posture and the turned fillet is placed on cooked rice as it is or after transferring the fillet to a special feeding hand to perform the automatic production of SUSHI. |
