PROBLEM TO BE SOLVED: To obtain a new dessert containing Myrciraria dubia juice richly containing natural vitamin C and minerals, good in taste and high in nutritive value. SOLUTION: This dessert contains the juice of Myrciaria dubia which is an edible plant belonging to the family Myrtaceae. The myrciaria dubia juice can be prepared, e.g. by a method comprising grinding the fruits of the Myrciaria dubia, adding pectinase to the ground product to reduce the content of the pectinase, inactivating the enzyme, filtering the product, and subsequently thermally sterilizing the obtained juice. In order to prevent the deterioration of the juice, the juice is preferably treated under the flow of nitrogen gas and/or mixed with an antioxidizing agent, when the juice is prepared. By the treatment of the juice with a filtration auxiliary such as cellulose powder the flavor of the juice can be improved. By the further addition of a sour agent, a sweetener, a perfume, vitamins, etc., the flavor of the juice can be improved or strengthened. The Myrciaria dubia juice is preferably mixed in an amount of 1-10wt.% based in the dessert. |
