PROBLEM TO BE SOLVED: To provide a method for cooking beans such as azuki beans and a device therefor, capable of reducing heat resistant germs and dirts extremely and treating discharged water separately. SOLUTION: This method for cooking beans is to forward the beans washed by a cereal washing machine 1 with water to a heating tank 3 exclusively used for a preliminary cooking with a downstream side conveying means 2, supply the beans to a cooking pot 5 with an upstream side conveying means 4 after removing an astringent component of the beans in the heating tank 3, and conduct the principal cooking of the beans in the cooking pot 5. In addition to the washing with water in the cereal washing machine 1, by preferably draining water at the downstream side conveying means 2 and removing the astringent component in the heating tank 3, the removal of germs and dirts is sufficiently performed, also by conveying the beans from the heating tank 3 to the cooking pot 5, the attachment of the germs to the inside surface of the cooking pot 5 is almost eliminated, and further, since dirty water discharged from the cereal washing machine 1, discharged water from the water draining and waste water from the removal of the astringent component can be treated separately, the treatments of water are easily performed. |
