Process for preparing a flavouring agent, in which cooked leguminous plant seeds are fermented with a Bacillus subtilis or Bacillus natto strain, a mixture is prepared comprising the fermented seeds, a reducing sugar and water, the mixture is reacted by heating and the reaction product is dried. |
