摘要 PROBLEM TO BE SOLVED: To prepare the subject soup having rich taste and flavor without heating by passing a soup including noodle soup, TEMPURA soup, bean curd soup, Japanese- style stock, etc., through a ceramic membrane and filling the obtained aseptic soup in a clean room into a bag made of a film sterilized with γ-rays. SOLUTION: A stock-containing soup such as noodle soup, TEMPURA soup, bean curd soup or Japanese-style stock is prepared by preparing a stock from dried bonito, tangle, etc., mixing the stock with brewed soy sauce, MIRIN (a sweet Japanese rice wine used as seasoning), sugar, etc., and adjusting the pH and the balance of the taste such as salt and sugar to meet specifications. The obtained soup is sterilized by filtering with a ceramic membrane made of a highly pure alumina and having a pore size of 0.1-1μm. The objective stock-containing soup filled in a bag and having rich taste and flavor can be prepared without using thermal sterilization treatment causing the deterioration of the flavor component of natural materials such as dried bonito and tangle by filling the obtained stock-containing soup using a filling machine in a clean room into a bag made of a bag film sterilized by the irradiation with γ-rays of 6-10kGy.
