PURPOSE: To obtain the subject new compound having refreshing fragrance and flavor similar to those of a spice, wood, fruit, flower, etc., excellent in the durability of the fragrance and the flavor, and useful as a perfume substance for beverages, foods, cosmetics, and healthy, and sanitary and medicinal products. CONSTITUTION: A trans-2-acetoxy-1,8-cineol of formula I (Ac is acetyl). This compound is obtained by dissolving trans-3-hydroxy-1,8-cineol of formula II in an organic solvent such as pyridine, triethylamine or methylene chloride and subsequently reacting 1 mole of the compound of formula I with 1-2 moles of an acetylating agent such as acetic acid (anhydride) or acetyl chloride at 0-100 deg.C for 0.1-10hr. |
