METHOD OF DRYING WITHOUT DISCOLORING CHINESS YARN ROOT

The dried chinese yam roots is prepared without discoloration by removing their rind, soaking them in an aqueous solution containing 0.01-3wt.% L-cystin or L-cysteine for 2-3 sec., and drying in a usual crop drier at 45-85 deg.C.
