<p>PROBLEM TO BE SOLVED: To obtain a kimchi (korean pickles) storage and a kimchi aging and storing method preventing the rancidity of kimchi by speedily aging kimchi and effectively storing it. SOLUTION: The kimchi storage includes a main body consisting of plural kimchi storing room provided with a freezing equipment room 41 and a kimchi storing case 70, a door, a heater, at least one high temperature sensor 20 and low temperature sensor 21, an evaporator, and a control unit adjusting this evaporator and a heater. The kimchi aging and storing method includes semi- aging for storing tastily produced kimchi at 20 to 30 deg.C for 6 to 12 hours, perfect aging for storing kimchi at 7 to 10 deg.C for 1 to 3 days, a storing process for storing kimchi at 1 to 2 deg.C, semi-aging for storing at 10 to 12 deg.C for 2 to 3 days, perfect aging for storing at 5 to 7 deg.C for 5 to 7 days and a storing process for storing at 1 to 2 deg.C.</p> |
