PURPOSE: To obtain the new fermented processed food similar to a sausage and capable of being utilized also for Western food menus. CONSTITUTION: This fermented soybean processed food is produced by packing 100 pts.wt. of a protein material comprising 70-10wt.% of enzyme-inactivated or sterilized soybeans and 90-30wt.% of meat or fish, and <=45 pts.wt. of food materials such as an elastic reinforcing material, a taste-improving agent, a seasoning and a spice into a tubular container and subsequently thermally treating the packed food materials, has a shape and a texture similar to those of a sausage, and is provided with the flavor of the fermented beans. |
