The tannin removing process from Chinese quince (I) extracts (II) consists of (1) extracting with 8 volumes of water relative to a volume of (I) at 90-100 deg.C for 3 hours to get crude (I), (2) incubating at 0-5 deg.C for 1-2 days and filtering, (3) mixing with 8-12% volume of 5% egg white solution at 90-100 deg.C for 30 min., (4) centrifugating and evaporating under vacuum. (II) does not have astringent taste. |
