The invention relates to a process for the preparation of a product rich in fibres suitable for dietary purposes obtained from tomato pomace, characterized by including a pre-treatment which can include a pre-washing, drying, grinding and, if necessary, washing with agents that improve the properties of the product, and a fermentation phase and a granulation phase, resulting in a product rich in dietary fibres and with characteristics advantageous for use in food and/or dietetic products. The invention also relates to the product obtained by the process of the invention, made up of a derivative rich in fibres suitable for dietary purposes obtained from tomato pomace and processed by means of a pre-treatment which can include grinding and, if necessary, washing with agents that improve the properties thereof, followed by a fermentation and/or granulation process, if necessary with addition of other food components intended to modify the properties, presentation or flavour of the final product, such as honey for example. The final product obtained is rich in dietary fibres and has characteristics advantageous for use in food and/or dietetic products.
