PURPOSE: To obtain the subject new enzyme having a specific amino acid sequence, derived from Synchocystis-PCC 6803, comprising a gene useful for improving a fatty acid composition of an animal, a plant and a microorganism and for importing them with a low resistance temperature. CONSTITUTION: This new recombinant Δ9 unsaturated enzyme has an amino acid sequence containing an amino acid sequence of the formula, derived from Synechocystis-PPC 6803, has an action of converting stearic acid as a saturated fatty acid bonded to a glycerolipid into oleic acid as an unsaturated fatty acid, and comprises a gene useful for improving a fatty acid composition of an animal, a plant and a microorganism by transformation and producing an animal, a plant and a microorganism having a low temperature resistance. The enzyme is obtained by extracting genome DNA from Synechocystis-PCC 6803 to prepare a genome library, screening the library to select a strain containing Δ9 unsaturated enzyme gene, incorporating the DNA into a vector and manifesting. |
