PURPOSE: To obtainα,αtrehalose at a low cost and in a high yield, having a high quality, and useful for foods, cosmetics, medicines, etc., by conducting the reaction, etc., of applying a glucanphosphorilase to anα-glucan, etc. CONSTITUTION: This method for producingα,α-trehalose comprises conducting simultaneously under a condition of pH5-8 the reaction of applying anα- glucanphosphrilase derived from the potato, sweet potato or corn to anα-glucan and a phosphate of a starch (solubilized material), etc., and the reaction of applying a trehalosephosphorilase derived from Basidomycetes bacteria toα- glucose-1-phosphate and glucose.
