PURPOSE: To provide a method for processing a scallop without losing the tastiness in processing the scallop. CONSTITUTION: This method for processing a scallop is to recover a broth in heating the scallop, concentrate the recovered broth in a concentrator, thereby extract the essence of the scallop, place the taken out adductor and the essence of the scallop in a vacuum vessel, evacuate the interior of the vacuum vessel and thereby impregnate the adductor with the essence of the scallop in processing the scallop by heating the scallop, then immersing the heated scallop in a water tank, cooling the scallop, removing the entrails by washing with water and taking out only the adductor. |
