PURPOSE: To provide a method for producing an apple puree capable of assuming a grated gritty texture. CONSTITUTION: This method for producing an apple puree is to remove the skin and core of an apple with a skin and core removing machine 10, then crush the resultant apple with a hammer crusher 12, carry out the heat treatment of the crushed apple as a browning preventing treatment with a heater 14, then strain the crushed apple through a screen, having >=3mm mesh opening and constituting a strainer 16, provide a grated apple puree, subsequently pass the prepared apple puree through a heater 22 and a cooler 24 of a thermal sterilizer 20 and carry out the thermal sterilizing treatment of the apple puree to produce the apple puree. |
