To recover and recycle residue from cement industry prodn., esp. concrete works, it is sepd. into coarse material and residual sludge where the sludge is returned to the prodn. process. The density and mass of the sludge are measured, before return to the mixing station, to give the solid material content. Also claimed is an assembly with a measurement stage (11) in the feed channel (9) for the residual sludge to the mixing station (10). A radiometric unit gives a non-contact measurement of the sludge density. A mass measurement unit (12) monitors the sludge mass through weighing scales or a flow meter.
