PURPOSE:To provide a noodle such as UDON (a kind of Japanese noodle made from wheat flour), having a specified shape, an apparent shape more similar to handmade noodle and a large outer periphery and excellent in adhesion of soup and taste. CONSTITUTION:This noodle is composed of a long body extending in the longitudinal direction and having a quadrilateral cross section containing a pair of acute-angle corners facing to each other and the other pair of obtuse-angle corners facing to each other. In addition, cutting of this noodle is carried out preferably by using a rotary noodle cutter unit composed of the first rotary roller 21 equipped with many blade units 21a in the axial direction and the second rotary roller 22 rotatably supported, equipped with many blade units 22a opposing to the respective blade units 21a of the first rotary roller 21 in the axial direction and arranged parallel to the first rotary roller 21. The edges of these blade units 21a and 22a of the respective rotary rollers 21 and 22 are formed on the circular slope surface inclined from the axis of the rotary shaft of the rotary rollers 21 and 22 and the slope surfaces of the respective edges of both the rotary rollers 21 and 22 are opposed to each other so as to bite each other. |
