PRODUCTION OF REFINED RICE WINE ABUNDANTLY CONTAINING VITAMIN C

摘要

PURPOSE:To produce a refined rice wine having an antioxidation activity and a biological activity of vitamin C by increasing the content of vitamin C in the refined rice wine within the category of refined rice wine without breaking the Liquor Tax Act. CONSTITUTION:This method for production of refined rice wine is carried out by conducting brewing in the presence of an Aspergillus having beta- glucuronidase activity, especially Aspergillus oryzae or a malted rice prepared by using Aspergillus oryzae transformed for manifestation of beta-glucuronidase through gene recombination.
