Measurement of the water content of a circulating oil/water mixt. involves: (a) positioning, across the liq. flow, a measuring chamber in which, periodically, a sample of the liq. is held stable during a measuring cycle of voltage application between one or more pairs of two electrode tip groups (10,12); and (b) measuring the number of short circuits produced per unit time across the liq. in order to determine the water content. The device for carrying out the above process has a housing (5) which can be immersed in the liq. flow (F) and which surrounds a measuring chamber (5) contg. the electrode tips (10,12). Arrangements are provided for applying voltage between the electrodes and for counting the short circuits produced in the liq. between the electrodes. Sealable inlet (14,18) and outlet (15,19) openings are provided in the housing (5) to allow liq. entry and escape into and out of the measuring chamber (6), and a mechanism (9,20) is provided for controlling, simultaneously, the opening and closing of these openings.
