Method and preparation of N-[N-(3,3,-dimethylbutyl)-L- alpha -aspartyl]-L-phenylalanine 1-methyl ester of formula (I), useful as a sweetener. The method is characterized in that a hydroalcohol solution comprising aspartame and 3,3-dimethylbutyraldehyde and having a pH of 4.5-5 is treated with hydrogen at ambient temperature and at a pressure not exceeding 1 bar in the presence of a catalyst selected from the group consisting of platinum or palladium on activated carbon, or platinum black or palladium black, and in that the produit is purified by precipitation and filtration after the alcohol part of the solvent is eliminated by the use of a vacuum. |
