PURPOSE:To obtain an apparatus for the preparation of punched bean curd having various shapes such as flower, leaf, fish, star and heart and usable as it is for cooking and to provide a process for the preparation of the bean curd by using the preparation apparatus. CONSTITUTION:This preparation apparatus is composed of a plate female mold 10 having plural through-holes 13, a plate male mold 20 having protrusions to be inserted into the through-holes and having similar shapes as the through- holes 13 and a plate pressing mold 30 for closing the through-holes 13. A punched bean curd is prepared by applying the plate pressing mold 30 to the lower surface of the plate female mold 10 having plural through-holes to close the through-holes 13, filling soya milk incorporated with a coagulant into the through-holes, inserting the insertion protrusions 23 of the male mold into the through-holes 13 of the female mold and lowering the male mold 20 while fixing the pressing mold 30 to the female mold to effect the dehydration and coagulation of the soya milk. |
