A process for reprocessing lactose-depleted whey permeate is described, obtaining a potassium-rich dietetic mineral salt mixture, which is characterised in that a permeate, which is depleted in polyvalent ions, lactose and nitrogen-containing whey constituents, is separated off from a lactose-depleted whey permeate by nanofiltration, using a semi-permeable membrane having a molecular mass exclusion limit of 200 to 400 and a salt exclusion capacity for sodium chloride in the range of 40 to 60 %, the separated-off permeate is concentrated to a dry matter content of 35 to 60 % by weight, a mineral salt mixture is crystallised out and the crystallised-out mineral salt mixture is separated off. |
