PURPOSE:To obtain a natural pigment-containing food product improved in stability and efficiently being prevented from browning by adding a prescribed amount of oil to solution of a natural pigment-containing food product and subjecting the product to high-pressure homogenization treatment. CONSTITUTION:An oil such as raw cream is added to a solution of a food product containing natural pigments such as anthocyanine pigments, carotinoid pigments, a red rice malt pigments, or flavonoid pigments in an amount of more than 1.0wt.%, preferably 3.0 to 8.0wt.%, and they are homogenized with a high pressure as mush as over 500kg/cm<2>, preferably 700 to 1,500kg/cm<2> to prevent the browning. |
