In an assembly to convert milk into thickened food products such as yoghurt within a fermenter (2), the novelty is that product flows from the fermenter to a holding tank (3) the sieve-like base (31) of which incorporates many small perforations. The holding tank (3) further incorporates a pressure plate (4) and grid (5) which applies downward pressure as required on the product thus expelling water through the base (31). The holding tank wall (3) incorporates a flap (32) whose lower edge is at the same height as the grid (5) through which the dewatered product is extracted for optional pressing into blocks or moulds prior to packing.
