Two sloping knife discs cut into the fish and are followed by two vertical knife discs which cut through to the backbone from both sides. The guides consist of paired plates sloping like the discs and spaced by rather less than are the sloping knives. The plates cover the forward end of the first knives and are adjoined by fillet offtake channels. Below the plates pairs of belts or chains with fitted hooks acts as conveyors for the fish through the machine. The belts are spaced by as much as the guide plates and arranged at a distance from these so that the backbone and side bones lie below the plates after the sides have been cut through. In this way the bones are forced onto the hooks and drawn of, allowing the freed fillets to pass out along the channel. The fillets are firm and clean, without the fish being damaged or flexed before the fillets have been safely removed from it. |
