PURPOSE:To swell the coffee powder, to easily extract the tasty component of coffee, and to extract tasty coffee by temporarily steaming the coffee powder by interrupting the extraction of coffee. CONSTITUTION:A hot water detecting device 24 detects the set temperature, for example, 70 deg.C and then it outputs a signal indicating the high temperature. Receiving the signal, an actuator 32 is operated. A route switching means passes the hot water in a hot water route 27 to a route 30 from which the hot water is ejected and the coffee is extracted. The coffee is received by a vessel 37 and kept warm by a heater 26. A motor 18 is energized, and then the hot water is distributed by the rotation energy of a cutter 19 mounted on the motor 18 and showerly collided with the inner wall surface of a mill 20. It cleans the inner wall surface of the mill 20 and dripped on an extraction device 22. After a small amount of hot water is poured over the coffee powder in the extraction process, a route switching means is switched to a circulating route 28.
