PURPOSE:To prepare TEMPURA (deep fried fishes and vegetables) having attractive form by forming bloomed coating (coating expanded in the form of flowers) over the whole surface of an ingredient of TEMPURA. CONSTITUTION:The apparatus for forming the above TEMPURA is composed of an ingredient-supporting member 20 stationarily or movably placed near the oil surface and above the bottom of a fryer 1 and supporting an ingredient preparatorily coated with a coating batter, an apparatus 4 for supplying a blooming coating batter to drop blooming coating batter to the ingredient W on the ingredient supporting member 20 through the oil surface and a bloomed coating stirring apparatus 5 placed in parallel to the blooming coating batter supplying apparatus 4 and ejecting hot oil against the ingredient W coated with droplets of the blooming coating batter. |
