The present invention consists in a new microorganism (Azotobacter chroococcum strain PHA, CECT 4435), obtained by induced mutation with N-methyl-N-nitro-N- nitrosoguanidine, able to accumulate poly- hydroxyalkanoates (PHAs) during its growth (without any nutritional limitation). The use of this bacteria in fermentative processes, using different carbon sources (sugars, olive waste water or alkanoic acids), makes it possible to produce homopolymers (poly-3-hydroxybutyrate) or copolymers (poly- 3-hydroxybutyrate/3-hydroxyvalerate), the molecular ratio of the copolymers being dependent on the nutritional glucose/propionic and glucose/valeric ratio.
