PURPOSE:To apply food intact, which is maintained in a chilled temperature zone and is to be stored in the vicinity of a freezing point, by maintaining a temperature in a stockroom from below 3 deg.C to a temperature in the vicinity of a freezing point and maintaining a humidity in the stockroom at or above 70% RH by means of moisture evaporated from a stored food. CONSTITUTION:A stockroom 6 is cooled such that the temperature in its interior is lower than 3 deg.C and in the vicinity of a freezing point, and the stockroom is cooled by a cold air (shown by arrows) which flows around a container 7 and a cover body 8. A size of a humidity conditioning plate 9 and a gap 22 are designed such that when unpackaged chilled food is received in the container 7 to a standard condition (50% of a volume of the stockroom), steam generated from the chilled food can ensure humidity amounting to 80 to 90% RH in the stockroom 6. Accordingly, the humidity in the container 7 exceeds 90% RH to approach 100% RH in the case of mass loading where the chilled food occupies more than 50% of the volume of the stockroom 6. When 100% RH is exceeded, moisture is discharged outside the stockroom through the humidity conditioning plate 9. |
