Drying of protein compounds, in particular of protein hydrolysates and protein-fatty acid condensates

Fine particle, pale-coloured, free-flowing protein compounds can be obtained from their aqueous solutions, suspensions or pastes by drying. The moist material to be dried is passed at the same time as a hot gas, in particular air, with an inlet temperature of at least 100 DEG C to 250 DEG C, in particular 150 DEG C to 200 DEG C, into an elongate drying container, and the material to be dried is rotated together with the hot gas around the long axis and is moved axially and is discharged at the end of the drying container. The drying process is both economic and temperature-sparing. Relatively high throughputs can be achieved without impairing the product quality, especially the colour of the product.
