PURPOSE:To obtain a method for peeling skin of root vegetables, capable of keeping root vegetables such as sweet potato in edible state and then industrially peeling the skin. CONSTITUTION:Root vegetables whose edible part is covered with skin which is kept in tightly bonded state are boiled or steamed and then frozen and the surface parts of the frozen root vegetables are thawed and the surface parts lowered in hardness by thawing are mechanically removed. |
