PURPOSE:To produce polished barley having promoted pregelatinization to facilitate mixed boiling with polished rice by adjusting a specific gravity of polished barley to that of polished rice and improving water absorption ratio and swelling ratio of the polished barley. CONSTITUTION:Polished barley which is hydrated to have 35-45% water content and is stirred until roughness is formed on the surface of barley grains is fluidized in a high-temperature hot air at 160-260 deg.C for a short time, then dried with hot air at 60-120 deg.C into <=15% water content to give polished barley having promoted pregelatinization. In the case of blending the polished barley with polished rice and boiling, since barley grains are uniformly dispersed into the polished rice and the polished barley grains will not separate from the polished rice, the polished barley is readily useful for business use and provision of meals. Since the bargely grains have improved water absorption ratio, the barley grains sufficiently swell, soften, have no feeling of physical disorder with polished rice and excellent texture. |
