PURPOSE:To obtain vinegar having an acidity of >= a specific amount, a high acidity, low costs of storage, transportation, etc., inexpensive transportation cost especially in the case of longdistance transportation, making other raw materials having a high water content readily usable in the case of producing seasoning made of vinegar as a raw material. CONSTITUTION:Malt vinegar (12% acidity) is sufficiently mixed with dried cells of Xanthomonas campestris having ice nucleus activity and cooled to -30 deg.C for 14 hours to form ice. The formed ice which contains liquid part and is frozen in an integrated way is mechanically destroyed, centrifuged and the ice is removed to give new high-acidity vinegar having various merits such as high acidity of >=50%, considerably low water content, inexpensive transportation cost in the case of long-distance transportation and ready use of other raw materials having a high water content in producing seasoning comprising vinegar as one raw material. |
