In the mfr. of squeezing element for cheese mould, comprising a bag of permeable material, e.g. a textile, destined to be temporarily associated with a mould via a rigid ring defining the opening, (a) an elastic ribbon (11) is attached to the edge of the bag (10), (b) the bag (10) is introduced into a mould (1), formed from a block of material (3) with an annular channel (2) having an internal wall (4) slightly higher than the outer wall (5), such that the ribbon (11) is at the base (12) of the channel (2), and (c) a reticular monomer (13) is poured into the channel (2) to the height of the external rim (14).
