PURPOSE: To provide the method and device for directly, effectively and adjustingly heat-treating a food product. CONSTITUTION: This device for heat-treating the food product by the irradiation of infrared rays in a steam atmosphere is provided with a heat treatment tunnel 1, a porous conveyor belt 2 passed through the tunnel, infrared ray elements 5 and 6 above and below the conveyor belt inside the tunnel and steam injection nozzles 9-14 above and (or) below the conveyor belt inside the tunnel. |
