发明名称 PRODUCTION OF CAKE OR BREAD USING FROZEN TOPPING MATERIAL
摘要 PURPOSE:To make water content of a topping material permeate into cake or bread without evaporating water content of the topping material by putting a frozen topping material providing an oil and fat layer on the cake or the bread so that the oil and fat layer may become upper face and baking the material at a proper temperature. CONSTITUTION:A topping material such as white sauce, curry sauce or meat sauce is frozen and oils and fats such as soybean oil, olive oil, head cheese or butter are applied to the surface of the frozen topping material so as to contain 0.5-30wt.% (preferably 1-10wt.%) oils and fats based on the topping material to provide an oil and fat coat layer on the topping material and the topping material is put on cake and bread so that the oil and fat layer become upper face and baked at a proper temperature.
