PURPOSE: To provide a low-density milk chocolate compsn. substantially containing no sugar but showing the same taste and smoothness of a conventional milk chocolate, and to provide its producing method. CONSTITUTION: A milk chocolate comprising cocoa, milk and edible carbohydrate additive and sweetener having lower metabolizable calorie than sugar has is aerated with an inert gas. In this method, the cocoa component consists of a cocoa butter and a coca liqueur, the milk component consists of a milk powder and butter fat, and the sweetener component contains sugar alcohols. By this method, a low-density milk chocolate compsn. having about 30 to 40wt.% whole fat amt. but substantially containing no sugar is obtd. |
