PURPOSE:To obtain tasty broiled meat having water holding ability, finished soft and full, with unfavorable meat odor masked by roasting meat such as beef, pork or fowl with a cooking method. CONSTITUTION:In cooking by roasting meat, 0.5-20wt.%, based on the meat, of powdery or liquid sardine flesh-derived peptide is added to meat to obtain a tasty broiled meat. |
