PURPOSE:To provide the subject composition containing both a polysaccharide and a branched dextrin, capable of being utilized as the substituted of fats for various foods and capable of not only reducing the calories of the foods but also giving mild palatability and concentrated touches to the foods. CONSTITUTION:The objective composition contains a polysaccharide such as xanthane gum or tamarind and a branched dextrin in a ratio of 1:4-100 (preferably 9-50). The composition is added to a fatcontaining food such as mayonnaise, Hamburger steak or butter in an amount of 0.05-0.5 part per part of the fats. |
