PURPOSE:To provide the amylase-inhibiting substance excellent in the physical properties such as color, smell and physical natures and not having a problem from the viewpoint of safety. CONSTITUTION:An amylase-inhibiting substance is obtained by extracting the leaves of a laurel tree with a water-containing ethanol solution. An amylase- inhibiting substance is obtained by subjecting the leaves of the laurel tree to a defatting treatment and subsequently extracting the remained leaves with a water-containing ethanol solution. An amylase-inhibiting substance is obtained by extracting the leaves of the laurel tree with a water-containing ethanol solution and subsequently subjecting the extract to a defatting treatment. A food contains either of the above-mentioned amylase-inhibiting substances.
