PURPOSE:To obtain the subject dumpling soft in palate feeling with flavor retained, through such processes that moisture-contg. glutinous rice is made into rice flour while pouring water thereon to remove coarse particles, the resulting flour is dehydrated into a lump of refined rice flour, which is then kneaded while adding water thereto, and the resultant dumpling is stuffed with ingredient(s) like jam and frozen, and it is put to boiling treatment when to be taken. CONSTITUTION:Moisture-contg. glutinous rice prepared by immersing glutinous rice in water is made into rice flour while pouring water thereon, and the resulting milky liquor is freed from coarse particles to adjust particle size followed by dehydration to obtain a lump of refined rice flour. Thence, such an amount of water as to be suitable for making a dumpling is added to the lump again followed by kneading, and the resultant dumpling is stuffed with ingredient(s) 1 like jam and/or cream into a refined rice flour dumpling a which is then frozen. When to be taken, the dumpling is poured with or immersed in hot water to convert the raw dumping a into a boiled refined rice flour dumpling a, thus affording the objective dumpling a. |
