PURPOSE:To carry out the deodorization of the title plant without impairing its inherent crispness by putting such plant to high-pressure treatment. CONSTITUTION:A genus Allium odoriferous plant such as garlic, onion, leek or Welsh onion is put, either directly or in a crushed state in a liquid or pasty medium sealed in a pressure bag made of synthetic resin film, into a high- pressure chamber 2 followed by filling the chamber 2 with a liquid medium W1 and then carrying out high-pressure treatment at normal temperatures to 80 deg.C under a pressure of 2000-6000kg/cm<2> for <=40min, thus accomplishing the objective deodorization. |
