PURPOSE:To obtain a cinnamic acid useful as a raw material for spice and seasoning safely and economically by oxidizing cinnamic aldehyde, beta- methylstyrene or a specific alkylbenzene with a microorganism. CONSTITUTION:(A) Cinnamic aldehyde, (B) beta-methylstyrene and (C) an alkylbenzene of the formula [(n) is 2-10; (m) is 2n+1] containing an n-alkyl in the side chain is brought into contact with a suspension or dispersion of a bacterium, pref., a paraffin assimilating bacterium and oxidized to give cinnamic acid & readily from an inexpensive raw material. |
