PURPOSE:To prepare flour for bread having excellent water-resistance and palatability by mixing wheat flour with a specific amount of emulsified oil and fat, etc., having heat-resistance. CONSTITUTION:A raw material composed mainly of wheat flour is mixed with water to obtain flour for bread by conventional method. In the above process, 100 pts.wt. of wheat flour is mixed with 1-25 pts.wt. of a heat-resistant emulsified oil and fat (e.g. an 0/W-type emulsion of an oil and fat such as coconut oil emulsified with an emulsifier such as glycerol fatty acid ester) or a heat-resistant and freeze-resistant emulsified oil and fat. |
