<p>An apparatus and a method are disclosed wherein a dough, after being preconditioned with water and steam in a preconditioning mixer (14), is supplied to an extruder (20) having a cooking section (30), an optional steam vent (34), a cooling section (40), a mixing section (48) and an extrusion die (90). The dough is conveyed sequentially through the cooking section (30), cooling section (30) and mixing section (48) to the extrusion die (90). A supercritical fluid such as CO2 is injected through an injection inlet (46) into the cooked and cooled dough in the mixing section (48) at a temperature and pressure which will dissolve the supercritical fluid into the dough before exiting the extruder (20). The dissolved CO2 then expands the dough after exiting the die (90), resulting in a dough product with many regularly-shaped, unconnected pores and a smooth outer skin.</p> |
