ANTIOXIDANT CONTAINING ANTI-OXIDATIVE EXTRACTED SUBSTANCE PRODUCED FROM FUNGUS

摘要

PURPOSE:To obtain the subject substance showing a remarkable synergistic effect when used in combination with alpha-triphenol and excellent in safety from the view point of food sanitation by culturing a specified fungus separated from a food and subsequently extracting the resultant culture filtrate with an organic solvent. CONSTITUTION:One strain [e.g. Aspergillus niger hetermorphus (CBS=117.55)] belonging to Aspergillus niger separated from a food is initially cultured. The resultant cultured material is then separated and filtered and the obtained culture filtrate is subsequently extracted with an organic solvent such as ethyl acetate or diethyl ether, thus obtaining the objective substance. As the food used for separation of the fungal strain, e.g. dried dentinus edodes or a gumbo is used.
