摘要 A paste contg. 20-40 wt.% of Ca sorbate is used as surface preservative on slow ripening extra hard cheese. The paste contains 28-38% of Ca sorbate, and is prepd. by reacting a concd. aq. soln. of K sorbate (pref. dissolved in water at 45-55 deg.C) with an aq. soln. of CaCl2. The paste is esp. used for surface preservation of Parmigiano-Reggiano or Grana Padano cheese. ADVANTAGE - The paste can easily be applied with a cloth, dries quickly, gives protection during the whole ripening process, and can be brushed off at the end of ripening
