An installation according to the invention comprises a cutting table (1) associated with a gantry (5) supporting the cutting tools (4). Metal sheets (2) to be cut are placed on the cutting table (1). The cutting table (1) comprises a water tank (14) carried by a stand (13). A peripheral wall (17) surrounds the intermediate space (16) lying between the metal sheets (2) and the level of water (15) contained in the water tank (14). Suction orifices (18, 19) and suction pipes (20, 21) are provided in the peripheral wall (17) and lead to an inlet (suction) manifold (22) via valves (23). The suction orifices (18, 19) are distributed over the periphery of the intermediate space (16). The water tank (14) collects the solid waste. The suction orifices (18, 19) collect the gases and smoke in the area occupied by the cutting tools (4). <IMAGE>
