摘要 PURPOSE:To obtain soy sauce excellent in quality, productivity, color and luster by removing impurities from water, raw soy, etc., used in a process for producing soy sauce through a filter composed of zeolite, etc., while controlling temperature. CONSTITUTION:Impurities are removed with a filter composed of an assembly of small grains such as zeolite, 'IO-SEKI' (a kind of rock produced in the HOKURIKU district) or ceramic in all or part of places for passing liquids such as water, salt water or raw soy which is a semifinished product, product soy sauce, etc., used in a process for producing soy sauce. A temperature regulator is installed in the aforementioned filter to regulate the temperature of the passing liquids to 20-30 deg.C. Thereby, the objective soy sauce is obtained.
